Choc Coconut Date Balls
Makes about 10 balls
100g medjool dates, pitted and roughly chopped
1 cup shredded coconut
1 Tbl cocoa powder
1/2 Tbl black strap molasses (optional)
Put all ingredients into the bowl of your food processor and mix until mixture begins to clump together or resemble cookie crumbs (this part depends on how squishy your dates were to begin with).
Using a spoon, scoop desired amount of mixture into your hand and roll into a ball (I use about 1 tsp per ball).
Place balls into an airtight container and leave to set in the fridge for at least 30 minutes. This helps the balls to harden and have a chewy consistency. Store in the fridge for 3 -5 days.
Note: adding the blackstrap molasses gives the balls a liquorice taste.
